This week’s tofu press of a tome is Magnus Nilsson’s The Nordic Cookbook, which, as we’ve discovered, encapsulates Denmark, the Faroe Islands, Finland, Greenland, Island, Norway, and Sweden—the whole “Nord,” as it were.
